Essex, England — the old country around Maldon, where the soil, weather, and water shape what comes out of the ground. This product can only taste the way it does because it's from here, and nowhere else.
Grown on smallholder plots, sun-dried on woven mats in the village square, and hand-sorted by the women of the cooperative before being sealed for the journey.
Harvested after the rains and sun-dried through winter; freshest lots land between November and January.
Hand-harvested pyramid-flake sea salt from the Blackwater estuary. Crisp, briny, breaks easily between fingers. The bench standard for finishing.
